Garlic Bread with Fontina Cheese

This is a very easy dish to make with either a baguette or ciabatta, as you want to have a solid crust on bottom and airy open bead on top.

Ingredients

  • 1 baguette or ciabatta bread split down the middle
  • 3 tablespoons unsalted butter
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, peeled and finely sliced
  • 2 cups fontina cheese, shredded
  • 1/2 teaspoon kosher salt
  • Fresh chives, chopped
  • Red pepper flakes
  • Parmesan cheese, freshly ground

Making It

  • Turn your oven to 400 degrees with a rack in the middle
  • Place the bread, open side up on a baking sheet lined with tinfoil
  • In a small sauce pan over medium heat add the butter and olive oil till heated, add the sliced garlic and cook until the garlic turns light brown, remove from head and stir in the cheese and salt until smooth
  • Top the bread with the buttery cheese mix and bake for 12-14 minutes, remove, set oven to broil, and put the bread back in until browned and bubbly
  • Top with chives, parmesan and the red pepper flakes (optional) and serve
