Eating Outside

The summer of 2020 saw eating outside become a key measure in slowing that pesky little pandemic that attacked the world. Then winter came and, well, eating outside lost its appeal. So now, a quasi-bonfire, open house is another solution to keep the air flowing and distance between your bubble peeps while not losing your mind in total isolation. Here is a good menu for such a gathering of a small group:

Minted Hot Chocolate with Peppermint Schnapps

Yes. Don’t be deceived by this innocent-sounding holiday beverage as the schnapps is 100 proof and packs a punch. This is great by a fire on a cold day as it can really warm up a crowd… literally. Ingredients 4 cup of whole milk10 Andes Creme De Menthe Thins, wrappers removed, separated (6 chopped and…

Sweet and Spicy Chicken Wings with Cilantro Sriracha Blue Cheese Sauce

This mixture of soy sauce, brown sugar and Sambal sauce creates tangy marinade for the small chicken wings and drums. Be sure to marinate for 24 hours and grill on a very hot grill to char the chicken. The sauce is easy to make with Marie’s Chunky Blue Cheese dressing. Just add Sriracha and chopped…

Mediterranean Pizza

Some good friends, Cintra and Grace, said they wanted more easy-to-make recipes. I reminded them that everything is easy, it all depends on how you look at it. They rolled their eyes, but I thought about what could be delicious, store-bought, and take just a few steps to make. We made a very easy pizza…

We tinkered with this many times and used what was available at local grocery stores, and I think the end result was excellent. Ingredients 2 quarts of homemade chicken stock1/4 cup soy sauce6 shallots,…

Fried Short Rib Dumplings

The greatest thing about dumplings is that you can make them with just about anything. The dough is easy to make, or you can buy dumpling wrappers at Asian specialty stores, on-line, or sometimes at a larger grocery store. Our short rib recipe takes a lot of time and effort, so we always double or…

Shepherd’s Pie with Curry and Cheddar Potatoes

Like every recipe on this blog, we have to tinker with it… so we have taken the traditional shepherd’s pie and hit it with an over-the-top flavor profile that brings an often bland dish to a new level. We made this for a brunch and it was a big hit. You can make it in…

Chocolate Chunk Pumpkin Spice Bundt Cake

The bundt cake has a stigma of Grandma’s house specialty. This is a great cake that is very easy to make and serves as something for just about every meal, from dinner dessert to a breakfast treat. Ingredients 16 tablespoons unsalted butter, room temperature, separated 2 1/4 cups all-purpose flour and extra to prepare the…
