
Making short-ribs is simple but takes a while. When I make them for a dinner party, I always make a lot extra and freeze the meat and sauce to make raviolis or in this instance short rib taco served on a grilled tortilla, with tzatziki, cheddar cheese, grilled onions and cilantro. This really makes for an amazing outdoor meal.
Ingredients
- Braised short rib meat
- 6 ounces extra sharp cheddar cheese, shredded
- 2 red onions, peeled and slices thickly (1/2 inch) into half moons
- 1 cup of cilantro leafs, rough chopped
- Tzatziki
- Extra virgin olive oil
- Small flour tortillas
- Kosher salt and freshly ground black pepper
Making It
- Turn the oven to 400 degrees, toss the onions in a few tablespoons of olive oil, salt and pepper, then roast for 20-25 minutes, set aside
- Turn the grill onto high and lightly char the tortillas on both sides
- Layer the tzatziki on the bottom, sprinkle the cheese, then the meat and then cilantro and serve
