Pizza Sauce

If you are going to make a pizza from scratch be sure to make a fresh sauce by slow roasting top quality canned peeled whole tomatoes. It’s very simple and yields a flavorful kick to every pizza pie.

Ingredients

  • 2 28 ounce cans of top quality peeled whole tomatoes, cut in half and seeded
  • 1 tablespoon parmesan cheese, freshly grated
  • 1 tablespoon of dried oregano
  • 2 teaspoons of red pepper flakes, divided
  • 4 garlic cloves, peeled and minced
  • 12 ounces of tomatoes paste
  • 1 cup red wine
  • 1 28 ounce can of tomato sauce
  • 2 tablespoons of fresh basil leaves
  • 1 tablespoon of fresh thyme leaves
  • 2 teaspoons of sugar
  • 1 teaspoon of kosher salt

Making It

  • Turn the over to 300 degrees and line a baking sheet with aluminum foil, strain the canned tomatoes and place on the sheet, sprinkle the parmesan, oregano, half of the red pepper flakes and bake on the middle wrack for 3 hours
  • Sauté the garlic for two minutes in olive oil, add the paste and wine then cook for seven more minutes, then add the tomato sauce, the baked tomatoes, basil, thyme, sugar, salt and cook on a low flame (simmer) for two hours, stirring every 15 minutes with a wooden spoon
