Burger De Mayo

So the whole Cinco De Mayo thing has always been a messy day as people start chugging tequila and then become absolute disasters. We came up with a hearty burger that will absorb a bit of the many drinks that are free flowing all day to celebrate the victory the Mexican Army had over the French Empire at the Battle of Puebla. The French came back a year later in force and kicked won it all back, but that really does not get discussed during the day of this great celebration.

Makes 8 Burgers

Ingredients

  • 2 pounds of ground chuck 80:20 ratio
  • 2 tablespoons fresh garlic, minced
  • 1 tablespoon of chili powder
  • 1 1/2 cup cilantro finely chopped, separated
  • 1 tablespoon of kosher salt
  • 1/2 tablespoon of freshly ground black pepper
  • 2 tablespoons of jalapeΓ±o, seeded and finely chopped
  • 1 cup mayonnaise
  • 4-6 dashes of sriracha
  • 1 tablespoon brandy or cognac
  • 4 avocados, smashed into a spread with kosher salt, black pepper and 1/4 cup fresh lime juice
  • Tomatoes, thinly sliced
  • 9 brioche hamburger buns
  • Iceberg lettuce
  • 1 red onion, sliced extra thin
  • Pepper jack cheese from the deli, thickly sliced

Making It

  • Put the beef in a large bowl, add the garlic, chili powder, cilantro, salt, pepper, jalapeΓ±o, and mix by flaking it with a fork then make into 4 oz balls, cover and refrigerate for an hour to let the flavors blend
  • Make the sauce by whisking together the mayonnaise, Sriracha, brandy/cognac. You want the constancy of this mix to be like a spread
  • Put a skillet over medium-high heat in the kitchen or on a grill which saves on grease splattering everywhere, put your of the balls on the skillet and press flat with a spatula, press 4-6 extra-thin onion slices on the top and cook for 3-4 minutes and flip, now the onion will cook into the top of the burger, add cheese on top and cover, cook for 3-4 minutes
  • Grill the buns, put the lettuce on the bottom, place the burger, avocado spread, tomato slice, onions then sauce and top the burger with the bun and serve

You can really take this burgers to another level and instead of pepper jack cheese make queso fundido and top the burger after it has been cooked.
