Making in Advance

My friend Marie texted me today to say that she had a lot of babies coming in her family and wanted to make some food in advance that could be frozen so she could stock the freezers of family members so they could just pull out a quick meal. I suggested the following items as simple, tasty and fresh even if frozen, and quick to get to the table.

Fennel Sausage Bolognese

This is east to make, easy to freeze and all you have to do is heat up the sauce, boil the pasta and mix. If you want to dress it up add some herbed ricotta cheese on top.


Wesley’s Marinated Skirt Steak and Chicken

This is easy as you can get, marinate the chicken and beef in the special ingredients for a day, put in a freezer back and keep for up to 5 months. Just pull out what you need in the morning and grill that night. This kept our friend Wesley’s kitchen going for years as she raised her six kids who would always show up with friends for dinner.

Eggplant Parmasean

This is a good one to make and freeze in the dish you plan to cook it it. Remove from the freezer 4 hours before baking.

Curry Chicken Pot Pie

You will have to buy or make the biscuits when you defrost this dish, but the heart of the dish can be made well in advance, do not cook until you are ready to eat.
