
Just before Thanksgiving people start pushing their healthier eating ideas to January, so just after New Years the guilt sets in for all the wine and eating that has taken place.
Not only does the guilt set in, but when people put on their work clothes the first time after the Holidays things feel a bit, well tight. First the blame is directed towards the dry cleaner for shrinking everything then reality sets in… Some people go overboard and for the first two weeks of the year when I entertain, guests will arrive to openly and proudly declare to everyone that they are alcohol free, no carbs for the month. It never lasts but why not encourage it?
I like a moderate approach to getting healthier meals in rotation because steam and rice crackers just won’t work for me. Here is my idea for a healthier yet tasty dinner:
- Hor d’oeuvres: Salmon Ceviche
- Soup: French Onion Soup with a simple Gruyere crisp instead of the usual blob of cheese and bread on top
- Entree: Roast Chicken
- Side: CousCous
- Dessert: Cookies…yes a cookie
