Spicy Cheddar Cheese Sauce

Cheese sauces have been long shunned but at LPB we are bringing them back to the table,  especially around the holiday season when people throw their diets to the wind and enjoy all the party treats they can get their hands on.  I use this sauce all year long from topping burgers to grilled veggies, potatoes, hot dogs and the list goes on.

Ingredients 

  • 4 tablespoons unsalted butter
  • 1 teaspoon red pepper flakes
  • 1/2 cup flour
  • 2 1/2 cups milk, hot
  • 8 ounces of extra sharp cheddar cheese
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 gruyere cheese, freshly grated
  • 1 tablespoon of course ground Dijon mustard
  • 3 to 4 dashes of Sriracha
  • Kosher salt and freshly ground pepper

Making It

  • Melt the butter over a medium flame, add red pepper flakes and sauté for a few minutes, then whisk in the flour and let cook for two minutes, add the milk on in 1/3 portions as you completely whisk in, let cook for another 3 minutes
  • Add the cheese and stir until fully incorporated, add the mustard and Sriracha, then salt and pepper to taste
