Yes…the mini quiche appetizer, a regular on the Washington cocktail party circuit and they are usually luke warm, a mushy pie crust shell and flavorless ingredients mixed in. We like to supercharge ours with a spicy kick, freshly grated cheeses and a crispy fillo shell which combines, makes the world of difference.
Ingredients
- 2 packages of mini fillo shells (15 in each)
- 1 cup half and half
- 2-3 big dashes of Sriracha
- 3 extra large eggs
- 1/2 cup gruyere cheese, shredded
- 1/3 cup parmesan cheese, finely grated
- 4 strips if bacon prepared: Roasted Bacon 🥓, then finely chopped or if you really want to turn up the flavor use crumbled Crispy Prosciutto
- 1 tablespoon of fresh chives, finely chopped
- Kosher salt and freshly ground pepper to taste
Making It
- Turn the oven to 350 degrees
- Whisk the half and half, eggs, Sriracha, parmesan cheese, salt and pepper and put in a liquid measuring cup
- Put chives, gruyere cheese and bacon in all of the fillo cups that have been placed in a mini muffin tin
- Fill each cup with the egg mixture, but leave a little room at the top
- Sprinkle with parmesan cheese and bake for 15-17 minutes, let rest for 5 minutes and serve
