Chocolate M&M Cookies


This is a tasty cookie has a boost of caffeine and a salty finish,  We always like to have cookies sitting around for guests to much on or serve with vanilla ice cream.

Makes 30 Cookies


  • 18 tablespoons of brown butter
  • 1 cup of lite brown sugar
  • 1/2 cup sugar
  • 2 extra large eggs, at room temperature
  • 1 tablespoon of bourbon vanilla
  • 2 teaspoons of instant coffee granules or espresso powder
  • 1 1/2 cup of flour
  • 1/2 cup of coca powder
  • 1 teaspoon of baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoon of kosher salt
  • 2 cups of M&Ms or chopped Heath Bars

Making It

  • Set the oven to 350 degrees
  • Put the butter and sugars in a mixer fitted with the paddle attachment.  Cream them on medium for 3-5 minutes. While the paddle is still going add the eggs one after the other then the coffee granules and vanilla
  • Sift together the flour, coca, baking soda, baking powder,  coffee crystals, salt into mixer and continue until fully incorporated.  Add the candy and let continue for 30 seconds or so
  • Line a baking sheet with parchment paper and take a smaller increase scoop and place the dough, 2 inches apart, depending on the size cookies you want
  • Cook for 15 minutes, let cool a bit and serve
You can also dust them with confectioners sugar when them come out of the oven.
