This is a simple appetizer or if you want to get fancy then you can go ahead and call them canapés. Either or, we have a host of different variations of BLTs, such as: Roasted Bacon, Tomato and Lettuce Mini Sandwiches or Bacon, Cheese & Crisp Lettuce Rolls but this is the smallest of them all and perfect for a cocktail party, brunch or so on.
This appetizer sits on top of a lite crispy piece of Brioche Toasts, layered with herbed mayonnaise, thickly cut roast bacon, a seasoned cherry tomatoes and some more freshly chopped basil.
Makes 20
Ingredients
- Brioche Toasts (five slices, toasted then cut in quarters)
- Roasted Bacon 🥓 (10 slices, roasted crispy)
- 2/3 cup mayonnaise
- 2 ounces of cream cheese, at room temperature
- 1 2/3 cup of fresh basil leaves plus 6 leaves chopped to finish off
- 2 tablespoons of fresh chives, freshly chopped
- 1 teaspoon garlic, minced
- 2 teaspoons of lemon juice
- 2 teaspoons of olive oil
- 3 ounces of red cherry tomatoes
- 3 ounces of yellow cherry tomatoes (or do just red if you want)
- 2 tablespoons of sherry wine vinegar
- Kosher salt and freshly ground black pepper
Making It
- Make the toasts and bacon as detailed
- In a food processor put the mayonnaise, cream cheese, 1 2/3 cup of the basil, chives. minced garlic, lemon juice, olive oil, salt and pepper (to taste) and pulse until fully incorporated
- Take the tomatoes and slice in half, toss in the remaining chopped basil leaves, sherry wine vinegar and 1/2 teaspoon of kosher salt, toss and put aside
- Layer the toasts, spread the herbed mayonnaise, bacon then top with 1/2 of the cherry tomato with the cut side up
