I love a soup and sandwich but have never been a big fan of the traditional tomato soup and grilled cheese (even with our super tasty 🇬🇧 Toasted Cheese Sandwiches.  I like a supercharged Ham, salami & cheese sandwich served with our Tuscan Onion Soup (Carabaccia).  Its a great pairing of flavors that can warm up a day, whether you are between runs on the slopes or you have been shoveling after a snowstorm, this is a great meal for a hearty crew.  Invest in a proper panini press or you can cook on a dry non-stick pan.

Makes 4 Sandwiches

Ingredients

  • 8 slices of rustic bread
  • 1/4 cup chives
  • 4 slices of smoked Virginia ham, cut very thickly at the deli
  • 8 slices of horseradish cheddar cheese, slice thickly
  • 1/4 pound of top quality salami
  • Kosher dill pickles, sliced
  • Dijon mustard

Making It

  • Turn the panini press on to medium high heat
  • Brush a very light spread of dijon mustard on the one side of the bread, then put a slice of cheese on top, followed by the ham, cover with salami then cheese on top of that, sprinkle chives and top with two slices of pickles and another piece bread
  • Put in the panini press for 3-5 minutes until the cheese has melted and serve
  • Make the Tuscan Onion Soup (Carabaccia) to serve with the sandwich
