Curried Vegetable Pasta Salad

This is a great side dish for a BBQ with the curry bringing an extra kick of flavor.  We add red onions, red peppers, grilled corn and finish off with fresh chopped dill or tarragon.

Ingredients

  • 1/2 pound fusilli pasta
  • 1/2 pound cavatelli pasta
  • 1 cup mayonnaise
  • 1/2 cup sour creme
  • 1 1/2 cup red onion, chopped
  • 1 1/2 cup red bell pepper, chopped
  • 1 1/2 cup of grilled corn
  • 2 tablespoons of fresh tarragon or dill, chopped and divided
  • 2 tablespoons of curry powder
  • Kosher salt and freshly ground black pepper to taste

Making It

  • Cook the pasta al dente, drizzle with olive oil and mix 1/2 tablespoon of curry and mix, let get to room tempertature
  • Mix the sour cream, mayonnaise and curry and add to the pasta
  • Add the vegetables, salt and pepper
  • Refrigerate for at least a few hours to let the flavors mix
