This is a great side dish for a BBQ with the curry bringing an extra kick of flavor. We add red onions, red peppers, grilled corn and finish off with fresh chopped dill or tarragon.
Ingredients
- 1/2 pound fusilli pasta
- 1/2 pound cavatelli pasta
- 1 cup mayonnaise
- 1/2 cup sour creme
- 1 1/2 cup red onion, chopped
- 1 1/2 cup red bell pepper, chopped
- 1 1/2 cup of grilled corn
- 2 tablespoons of fresh tarragon or dill, chopped and divided
- 2 tablespoons of curry powder
- Kosher salt and freshly ground black pepper to taste
Making It
- Cook the pasta al dente, drizzle with olive oil and mix 1/2 tablespoon of curry and mix, let get to room tempertature
- Mix the sour cream, mayonnaise and curry and add to the pasta
- Add the vegetables, salt and pepper
- Refrigerate for at least a few hours to let the flavors mix
