Sometimes, on a hot summer night, a lightly grilled zucchini that has been drizzled with olive oil and a little Chimichurri Rub mixed in is all you need for a side dish. This is a go-to favorite especially if you either serve cold or at room temperature.
Ingredients
- 3 strips of zucchini for each guest
- Olive oil to drizzle over the zucchini
- Enough Chimichurri Rub to sprinkle on the zucchini
- Red pepper flakes to taske
- Kosher salt and freshly ground black pepper to taste
Making It
- Turn the grill on high
- Slice the zucchini in 1/4 inch thick, lengthwise
- Drizzle with olive oil and sprinkle with Chimichurri Rub
- Put in red pepper flakes, salt and pepper
- Grill for 5 minutes, flipping halfway through
- Let rest and drizzle olive oil on just before serving
