img_2194This is a core recipe for so many meals and dishes. Β It is simple and creates juicy and flavorful white meat to be used in soups, stews, salads and hundreds of other recipes.


  • Whole split chicken breasts with skin on
  • Fresh thyme, chopped
  • Olive oil
  • Kosher salt, freshly ground black pepper

Making It

  • Set the oven to 425 degrees
  • Place the chicken on a half baking sheet lined with parchment paper
  • Drizzle olive oil on the chicken then liberally salt and pepper them
  • Put a 1/2 teaspoon of thyme on each breast
  • Place in over and resent the temperature to 350 degrees
  • Cook for 45 +/- minutes, depends on the size of the breast (you want the inside temperature to be 165 degrees)
  • Remove from oven
