Roast Chicken Breasts

img_2194This is a core recipe for so many meals and dishes.  It is simple and creates juicy and flavorful white meat to be used in soups, stews, salads and hundreds of other recipes.

Ingredients

  • Whole split chicken breasts with skin on
  • Fresh thyme, chopped
  • Olive oil
  • Kosher salt, freshly ground black pepper

Making It

  • Set the oven to 425 degrees
  • Place the chicken on a half baking sheet lined with parchment paper
  • Drizzle olive oil on the chicken then liberally salt and pepper them
  • Put a 1/2 teaspoon of thyme on each breast
  • Place in over and resent the temperature to 350 degrees
  • Cook for 45 +/- minutes, depends on the size of the breast (you want the inside temperature to be 165 degrees)
  • Remove from oven
