I would never whip up some lobster for a breakfast dish. However, whenever there are leftovers it is a great addition to just about anything you are cooking.
Lobster Rolls (take just the meat)
Just follow the basic scrambled egg recipe: Eggsactly 🥚 🐔
When you get to the point that you are to put in the cream to the eggs, switch in the lobster meat that has already been seasoned, kosher salt and freshly ground pepper to taste
Then sear thickly cut ham, top with gruyere cheese and broil til bubbling
Use the same pan to sear herbed tomatoes
Put out some butter made with sea salt and whatever toasted bread or muffin you prefer
