Deep frying with tempura is easy, tasty and always a surprise to guests who have become accustomed to the standard hors d’oeuvres often served at receptions and parties.
Cake flour remains the best because of its protein levels keep the batter from becoming clumpy. What can you fry? The options are limitless, from green beans to cheese-stuffed squash blossoms, anything goes. ย It’s important to make sure you match what you fry with a good dipping sauce.
Ingredients
- 2 cups cake flour
- 1 3/4 ice cold soda water
- Kosher salt and freshly ground black pepper to taste
Place the cake and soda water in a bowl and mix. ย The trick is to not use a whisk, but three fingers or a fork if you prefer. ย Gently mix together until until all the lumps are gone then salt and pepper.
Do not make the batter ahead, do so just before frying.
