Roasted Basil Parmasean Tomatoes

These tomatoes heighten the taste of sandwiches such as a BLT or just about anything else you would put a sliced tomato on. Β Of course, this is for off-season only. You would never do this do a farm-ripened fresh tomato.


  • 1 pound of Roma tomatoes (depending how much you need)
  • 1 cup fresh basil leaves, packed
  • 1/2 cup extra virgin olive oil
  • 1/3 cup parmasean cheese
  • 1/2 teaspoon of minced garlic
  • Salt and pepper

Making It

  • Slice theΒ tomatoes 1/4 inch thick, place on a baking sheet lined with parchment paper
  • With a steel blade in the food processor, pulse the olive oil, parmesan, garlic, salt and pepper a few times
  • Drizzle basil cheese oil on the tomatoes

Time to Cook

  • Set oven to 400 degrees and roast the tomatoes for 20-25 minutes
  • Set aside and let cool
