These tomatoes heighten the taste of sandwiches such as a BLT or just about anything else you would put a sliced tomato on. Β Of course, this is for off-season only. You would never do this do a farm-ripened fresh tomato.
Ingredients
- 1 pound of Roma tomatoes (depending how much you need)
- 1 cup fresh basil leaves, packed
- 1/2 cup extra virgin olive oil
- 1/3 cup parmasean cheese
- 1/2 teaspoon of minced garlic
- Salt and pepper
Making It
- Slice theΒ tomatoes 1/4 inch thick, place on a baking sheet lined with parchment paper
- With a steel blade in the food processor, pulse the olive oil, parmesan, garlic, salt and pepper a few times
- Drizzle basil cheese oil on the tomatoes
Time to Cook
- Set oven to 400 degrees and roast the tomatoes for 20-25 minutes
- Set aside and let cool
