When it comes to brunch, I like to have some bites of food on the table when guests start trickling in. One thing Charleston and Washington have in common: people arrive when they arrive, so you must accommodate the timely folks as you wait for those who…well… One day in Charleston, a guest named Westin opted to show up two hours late, which set the record for overall bad guest tardiness. I do not want to give out his last name but he lives on Sullivan’s Island. But lucky for our punctual guests, they had something to eat while we all waited.
Ingredients
- 1 pound of thickly-sliced applewood bacon from your butcher
- Herbed roasted tomatoes
- 1/2 cup good mayonnaise, with 1/2 tablespoon of siracha sauce mixed in
- Red leaf lettuce
- 1 24 package of Martin’s Party Potato Rolls
Time to Cook
- Put a teflon pan on medium heat, spread mayonnaise on the rolls after you cut them down the middle and grill until golden brown
- Put lettuce on the bottom, followed by the strips of bacon cut in thirds, topped with the tomato
- Either add a little more spicy mayo or just put the bun on and spike it with a toothpick
